I picked up this original Outrun pedal assembly on Ebay for $25 plus shipping. It was rusted pretty bad, but the mechanics were in very good condition.

I used some 220 sand paper and a random orbit sander to clean up the steel. Here is the result after about an hour of sanding. The random orbit sander works great on metals because it leaves a very uniform finish.

Here is the mounted pedal assembly after more sanding and a clear satin spray sealer.

I interfaced the pedals using a second Dual Strike Hack. I was surprised at how I just plugged the pedals into the hack and it worked great without any adjustments.
